I’ve been making Bohan Burritos as long as I can remember. I’d say it’s an old family recipe but I’m pretty sure my parents created it. I’m not sure how they came up with it, but there’s no way it’s an authentic Mexican recipe. In fact, the closest thing I’ve ever seen to it anywhere else is a soft taco from Taco Bell, and well, there’s really no comparison.
You start off with a pile of stuff. Ground beef, a can of salsa, a can of refried beans, flour tortillas, lettuce, cheese, sour cream, olives, and optional toppings like onions and tomatoes.
Begin by frying the meat in a pan.
Once the meat is fully cooked, drain off the fat and pour in the salsa. I use Tostitos White People salsa. Deal with it. They used to make it in smaller jars, but I couldn’t find it. I was going to only use 3/4 of this bigger jar, but I accidentally the whole jar. That’s okay though, it’s still good.
Let the meat simmer while you get on with the rest of the steps. Chop the lettuce into little pieces.
And cook the beans in the microwave. A minute or two is all you need, depending on how much your microwave sucks.
While the beans are cooking, open up the rest of the stuff. I used to have to shred the cheese myself, but now that I’m a baller I buy pre-shredded cheese. Shredded cheese is the greatest invention since sliced bread, but what was the greatest invention before sliced bread?
By now the meat should be looking pretty damn tasty and you should hardly be able to wait to eat it.
Microwave a tortilla for 20 or 30 seconds, again depending on how much your microwave sucks. Then put a strip of lettuce about 2/3 the way across it. I do lettuce first so the grease from the meat can’t soak through the tortilla.
Next put on the meat, beans, and the rest of the toppings. Be careful not to make too big of a pile, or you won’t be able to fold it up.
Fold up the bottom first, then each side.
After that you just (in the words of my waiter at Applebee’s in New Jersey) “pick it up and put it in ya fuggin’ mouth.”
